Closing Responsibilities
Cleaning the grill
1. Turn off grill and fryer.
2. Turn off power at fuse box located in back room.
3. Scrape with grill pick.
4. Pour a pitcher of ice water on grill.
5. Pour Simple Green on grill.
6. Scrub with grill brick and grill pick.
7. Occasionally pour ½ pitcher of water on grill to rinse.
8. Wipe dry with paper towels.
9. Turn off grill fan.
10. Empty grease trap into white bucket under sink.
11. Use dry paper towels to wipe all grease splatters from fryer and under fryer and grill.
Restocking
1. Add hamburger patties to the refrigerator, if necessary (bottom shelf only).
2. Add pizza and chicken patties to refrigerator, if necessary.
3. Add ice cream to freezer.
4. Check candy. Open new box if necessary.
5. Fill silverware and napkin containers.
General cleaning
1. Turn off hot dog machine and throw away leftover dogs.
2. Wipe off all counters,microwaves,refrigerator, ice cream freezer, and Pepsi machine with cleaner. (CLEANER- About ½ gallon of hot water and one capful of bleach)
3. Sweep floor. Clean as needed.
4. Empty all trash and replace with clean bag.
5. Remove Pepsi nozzles and place in solution of hot water and bleach.
6. Bring in everything from outside and wipe off before refilling.
